First time I made paella I became terrified of this delicate dish. I stood in my kitchen for two hours watching my rice trying to Cook in a skillet. It NEVER became soft! I was starving by the time it was on the table and after that I wasn’t exactly looking forward to making it again
But, what can I say. I did. But this time I did it my way. Maybe you can’t even call it a ‘paella’. Maybe this is saffron rice with veggies? Ugh. Who knows. It sure is delicious anyway. And MUCH easier. This takes as long as it takes for your rice to cook basically. For me, 30 minutes. And I’m SO looking forward to adding this to my meal prep. Can you imagine how good it will reheat? And when the rice sits all night soaking up those flavors? Mmm..
Anyhow. This paella does not require a ‘paella pan’. All you need is a skillet and a pot cook you rice in. So, got saffron yet? Let’s do this!
150g black beans or chickpeas
2 packages 0.5g saffron
100g rice of choice
80g red bell pepper, roughly chopped
150g canned artichoke hearts, halved once or twice
1/2 yellow onion, roughly sliced
60g asparagus, roughly chopped
1-2 miced garlic cloves, depending on size
2- 3 White mushrooms, roughly chopped
pinch of salt, pepper and cayenne pepper
1 tsp minced capers
1/4 bullion cube
Lime, salad and red onion for serving
- Bring water to boil according to package. Add bullion cube and 3/4 or half of the saffron. Be careful so that it doesn’t become to strong for you taste. When the water is boiling, add rice and cover. Let Cook according to package.
- Add garlic and onion to a skilled over medium heat. Fry in oil or water until golden Brown. Then add in the rest of the veggies and fry until they get tender. Season with salt, pepper, cayenne and a pinch of saffron.
- Add beans and mix well. When the rice is ready. Pour it into the skillet and let it fry for togheter for about 5 more minutes. Then, serve with some hot sauce, cilantro, lime, red onion and a good salad
Yeesssh look at that golden color matching those black beans… It’s a feast on my plate. I’m defenitly gonna make this at least one milion more times this year. SO GOOD! I really hope you give it a go – you will NOT regret it. You seriously NEED to make this NOW. So stop reading and go get your saffron!
